After flowering, tomatoes require 50–60 days to reach fruit maturity. While the full size of the fruit is reached in half that time, the later stage of maturity is marked by external colour development and an internal chemical change. As the fruit ripens from green to red the acidity diminishes and both the sweetness and vitamin C content increases.
