Tomato Spread (mock turkey pasta)
- 2 tbs. melted butter
- 2 tbs. grated onion
- 2 medium sized Blush tomatoes (skin off)
Cook the above ingredients until tender then add:
- 2 tbs. grated cheddar cheese
- 2 tbs. fresh breadcrumbs
- 1 tsp. thyme.
- Stir through tomato and onion mixture.
- Use when cold as a spread for sandwiches or on cracker biscuits.
- Especially tasty as a filling for club sandwiches.
- Will keep for at least one week if refrigerated.
