Fresh Tomato Sauce (for pasta)
- 8 medium-sized ripe Blush tomatoes
- 1 tbs. olive oil
- 1 clove garlic
- 1 chopped onion
Peel, seed and chop tomatoes, place in saucepan and sauté until soft, then add:
- 2 tsp. sugar
- 1 bay leaf
- 1 tbs. tomato paste
- ½ cup white wine
- ½ cup chicken stock
- Bring to boil, and simmer for 30+ minutes.
- If a smooth sauce is desired, puree in blender.
- Refrigerate or freeze unused sauce.
