Tomato Salad with Tarragon Dressing
- 500 grams of Blush tomatoes (thinly sliced)
- 2 spring onions (chopped including green tips)
Tarragon Dressing
- 2/3 cup vegetable oil
- 1/3 cup tarragon white wine
- 2 tbs. sour cream
- 1 tsp. french mustard
- 1 clove garlic (crushed)
- 1 tbs. chopped parsley
- 1 tbs. chopped basil (or mint)
- 1 tsp. sugar
- Combine all ingredients in screw top jar and shake well.
- Arrange tomatoes on flat serving plate then pour dressing over and sprinkle with spring onion.
