Spaghetti with Fresh Tomato Sauce

  1. Heat olive oil in a frying pan over a medium-high heat.
  2. Add chilli and garlic & sauté until tender, approximately 2 minutes.
  3. Stir in the tomatoes, capers and spring onions and simmer until soft.
  4. Add basil, and season with salt and pepper to taste.
  5. Simmer over medium heat for 10 minutes.
  6. While the sauce is simmering, cook spaghetti until al dente, then drain.
  7. Toss cooked pasta through sauce & serve with grated parmesan, fresh crusty bread and a garden salad.
