Spaghetti with Fresh Tomato Sauce
- 3 tablespoon of olive oil
- 1 small. red chili, deseeded & chopped
- 3 garlic cloves, crushed
- 1/2 kg (6). plum Blush tomatoes, seeded & chopped
- 1/2 cup capers, rinsed
- Spring onions, diced
- 1/3 cup. chopped fresh basil
- Salt & pepper
- 500g spaghetti
- Fresh Parmesan cheese, grated
- Heat olive oil in a frying pan over a medium-high heat.
- Add chilli and garlic & sauté until tender, approximately 2 minutes.
- Stir in the tomatoes, capers and spring onions and simmer until soft.
- Add basil, and season with salt and pepper to taste.
- Simmer over medium heat for 10 minutes.
- While the sauce is simmering, cook spaghetti until al dente, then drain.
- Toss cooked pasta through sauce & serve with grated parmesan, fresh crusty bread and a garden salad.
