Savory Lamb Chops
- 8 neck or 4 quarter chops (times 6)
- 4 Blush tomatoes (peeled and sliced)
- 2 heaped tbs. of flour
- 1½ tbs. sugar
- 2 tbs. vinegar
- 2 tbs. tomato sauce
- 1½ cups stock (chicken or beef)
- ¼ tsp. mustard
- ¼ tsp. curry powder
- ¼ ground ginger
- 2 tsp. worcestershire sauce
- Salt and pepper to taste
- Chopped parsley
- Trim chops and place in casserole.
- Mix all other ingredients together and pour over chops. Then leave to marinade for at least 1 hour.
- Bake for 2 hours in moderately slow oven, for example, 120 degrees.
