Grilled Eggplant with Marinated Feta
- 500g feta cheese
- 250ml olive oil
- 2 cloves garlic, crushed
- 2 Graffiti eggplant, sliced into 1cm discs
- ⅓ cups garlic salt
- 1 tbs paprika
- 1 cup olive oil
- Crumble feta and marinate in olive oil and garlic. For best result marinate overnight.
- Season eggplant slices with garlic salt. Mix paprika with olive oil and brush over each slice.
- In a grill pan over a medium high heat grill eggplant slices until golden brown on each side, brushing occasionally with paprika and oil mix.
- Serve immediately topped with the marinated feta.
