Bruschetta
- 12 slices of Italian style bread, such a Cibabatta
- 6 ripe Blush tomatoes, peeled & diced
- 2 tablespoons chopped fresh basil leaves
- 2 tablespoon extra virgin olive oil & extra for drizzling
- 1 tablespoons red wine vinegar
- 1/2 tablespoons sugar
- 1 whole clove of garlic, peeled
- Salt & pepper
- In a mixing bowl combine diced tomatoes, basil leaves, olive oil and salt. Allow to stand.
- Drizzle bread slices lightly with oil, place on baking tray & grill until lightly golden
- When bread is toasted rub the garlic clove over the hot bread, for a mild flavor.
- Spoon tomato mixture over the bread slices & serve immediately.
- Spoon mixture onto toasted bread slices. Serve immediately.
